Achari aloo paratha

As a Indian we all love paratha and aloo paratha is just a hot favorite to everyone. But sometime we get bore with the same taste, so just at that time by adding a spoonful of pickle masala into this potato stuffing works like a magic and take your paratha to another level of flavor. So here is the recipe of magical paratha that means Achari Aloo Paratha.
Ingredients :
For the dough
  • 2 cup whole wheat flour
  • warm water to knead the dough
  • salt to taste
For the filling
  • Potatoes – 2 big size (boiled & mashed)
  • Onion – 1/4 cup (finely chopped)
  • Green chili – 2 (finely chopped)
  • Coriander leaves – 2 tbsp (finely chopped)
  • Cumin powder – 1 tsp ( dry roasted)
  • Pickle masala – 1 tsp ( take any of your favorite pickle masala)
  • salt to taste

Procedure :

1. In a wide bowl add the flours and salt and mix well. Use half the water and incorporate. Keep adding the water and knead into a smooth dough ball. Cover and keep aside for at least 20-30minutes. This helps in achieving an soft elastic dough.

2. In another bowl take all the ingredients mentioned under ‘For the filling’. Mix well and keep aside

3. Make 4 to 5 medium sized portions from the dough. Roll one into a smooth ball and flatten it on the board with a rolling pin into a medium poori size. Place the potato mixture in the centre of the dough leaving enough gap on the sides. Pinch the sides into a ‘potli’ and gently flatten. Dust extra flour  and roll out carefully into a medium sized paratha.

4. Heat a tawa/skillet and fry the paratha till golden brown on both sides applying ghee or oil as necessary.

5. Serve hot with thick curd and onion rings.
